Advanced Coursing & Kitchen Logic
For fine dining and structured service, the Advanced Coursing system ensures timing perfection. It removes the need for manual "Hold" tickets by intelligently routing items based on course type (Appetizer, Entree, Dessert) and prep time.
Feature Overview
- Auto-Coursing: Items are automatically tagged with a specific course sequence.
- Smart Fire: Set predefined delays (e.g., "Fire Entrees 12 mins after Apps").
- Station Sync: Ensures different stations (Grill vs. Frying) start items at the right time so the whole table finishes together.
For Servers: Controlling the Flow
Organizing the Order
- Enter items for the table.
- If an item defaults to the wrong course (e.g., a Salad as an Entree), tap the Course Button next to the item name.
- Select the correct course from the popup list (App, Entree, Dessert, Beverage).
Firing Courses
You have two modes for releasing food to the kitchen:
1. Auto-Fire (Default)
- Tap Send All.
- Appetizers fire immediately (Green on KDS).
- Entrees enter a "Hold" state (Dimmed on KDS). They will automatically fire after the predefined delay or when the appetizers are marked "Done" by the kitchen.
2. Manual Fire
- Use this for VIP tables where you want total control.
- Send the order. Entrees sit in "Hold".
- When the table is ready for the next course, open the check.
- Tap the flashing orange "Fire Entree" button. The ticket on the KDS will turn Active/Green.

Prep State vs. Fire State
- Dimmed Items (On Deck): These are future courses. You can see them to prep ingredients, but do not plate them yet.
- Green Items (Active): These are live. Cook and plate immediately.
- Red Items (Rush): Items specifically marked "Rush" by a manager or server.
Station Sync
Minerva optimizes ticket timing across stations:
- Example: A Steak (20 min cook) and a Fried Calamari (5 min cook).
- The Grill Station sees the Steak turn Green at 7:00 PM.
- The Fry Station sees the Calamari turn Green at 7:15 PM.
- Result: Both items finish exactly at 7:20 PM for fresh synchronization.
